Easy Key Lime Ice Box Pie Recipe | My Kitchen! My Rules!

I’ve got my gingham dress and my Dixie Crystals apron, so I’m ready to cook! Everyone keeps asking for MORE SWEETS, so today, let’s try this refreshing and cool Key Lime Ice Box Pie recipe. 👩🍳.

  • 1 12.3-oz. pkg. coconut cookies (such as Voortman Bakery), finely crushed
  • ¼ cup coconut oil, melted
  • 2 tablespoons Dixie Crystals sugar
  • 2 8-oz. containers frozen coconut whipped topping - thawed (optional: 1 16-oz container, divided of Cool Whip Original Whipped Topping
  • 1 14-oz. can sweetened condensed milk
  • 1 tablespoon lime zest plus ½ cup fresh juice (from 4 limes or 12 key limes)
  • Additional lime slices for serving


Step 1: Preheat oven to 350°F. Stir cookie crumbs, oil, and sugar in a large bowl. Press the crumb mixture firmly into the bottom and 1 ½ inches up the sides of a 9-inch springform pan or deep-dish pie plate. Bake until the edges are golden, about 10 minutes. Let cool completely on a wire rack for about 20 minutes.

Step 2: Meanwhile, stir one container of whipped topping, sweetened condensed milk, lime zest, and juice in a large bowl until blended. Pour mixture into cooled crust, cover with plastic wrap, and freeze until firm, at least 4 hours.

Step 3: Top with the remaining container of whipped topping (adjust the amount to taste). Decorate with lime slices and sprinkle with lime zest.
