This Southern Pistachio Salad, AKA dessert, is a recipe staple of my Mom’s alongside her Chex Mix!
3.4 oz box Jell-O Pistachio Instant Pudding Mix
20 oz can crushed pineapple (in its own juice)
1/2 cup chopped pecans
8 oz container Cool Whip
10 oz bag mini marshmallows
★ Chop pecans or nut of choice and set aside.
★ In a large mixing bowl, add pistachio pudding mix only – do not follow the directions on the box for pudding.
★ Mix in a full can of crushed pineapple, including the juice and crushed pecans.
★ Use a spatula to fold in Cool Whip and mini marshmallows.
★ Keep refrigerated until ready to serve.
