For y'all who say I don't make anything healthy, this is your night because we're going to make Cheesy Spinach Quinoa. One of Timmy’s favorites as long as I use the right brand of quinoa! I have Tiny Hero Golden Quinoa, which frankly, I love for the name. And yes that is pronounced keen·waa!
This is a great side dish with amazing flavor and texture PLUS decadent Gruyère cheese and can be paired perfectly with salmon or chicken.
Even if you are challenged in the kitchen, making this home-cooked meal is as easy as 1-2-3. And I promise you it's so good that even if you have picky kids, they'll eat it and suddenly your picky kids are gourmands.
